Bacon, Cheddar & Chive “Scuffins”

Bacon, cheddar and chive whole wheat scone/muffin hybrid; spinach salad; red seedless grapes; tangerine slices

For the ”scuffins” we followed this recipe, but made several changes.

  • we used 50/50 whole wheat and all-purpose flour
  • we added a dash of salt and a generous amount of pepper
  • we used Egg Beaters instead of a whole egg, low-fat cheeses and nitrate-free turkey bacon
  • Lastly, we used a can of creamed corn instead of cream of mushroom
